Green plum tastes tart and faintly salty in a way that catches western palates off guard, much closer to the preserved plum sold in Asian grocers than to anything in a supermarket fruit aisle. The inhale is sour and bright, a savoury edge shows up through the middle, and then the ice arrives and pulls the whole thing cold and dry.

It is a summer flavour and a strongly regional one. Customers who grew up on sour plum drinks or li hing mui recognise it in a single draw and it becomes a staple for them. Everybody else finds it deeply strange for the first hour, then either commits or moves on.

The honest limitation is that saltiness. This is not sweet the way the rest of the fruit range is sweet, so if you were expecting a normal iced plum you may be disappointed before you have finished the first day.
